紫薯粟米紅腰豆沙律(4人份)
材料:
紫薯 3個 (細),去皮
薯仔2個 (細),去皮
蛋黃醬 6-8 湯匙
粟米粒 1罐, 隔水
紅腰豆 1罐, 隔水
鹽 1茶匙
糖 1茶匙
胡椒粉 少許
做法:
1.
將薯仔及紫薯切片同蒸約20分鐘,至腍身。
2.
之後用叉略壓成蓉。待涼。
3.
蛋黃醬加入鹽、糖及胡椒粉拌勻。
4.
將所有材料同拌入薯蓉,可冷藏或室溫享用。
SWEET POTATO, CORN& KIDNEY BEAN SALAD
200g sweet potatoes (yellow flesh/purple), peeled
200g potatoes, peeled
3-4 tablespoons Mayonnaise
80g sweet corn kernels, drained
60g canned red kidney beans, drained
1/2 teaspoon salt
1/2 teaspoon sugar
Pepper
Method:
1. Slice sweet potatoes and potatoes then steam for 20 mins until soft.
Mash roughly. Let cool slightly.
2. Mix mayonnaise with salt, sugar and pepper.
3. Stir all the other ingredients to the mashed potatoes, serve at room temperature or chilled.
